Carrot Pola by Ayesha’s Kitchen
Carrot pola is a very popular Malabar sweet which resembles a cake – as a result, it’s also called “carrot egg cake” and is made on the hob. It was chosen by Katell Sevellec as it is almost a flour–less recipe and her oven is currently out of action!
INGREDIENTS
Carrots – 3 medium sized, roughly chopped
Eggs – 4 (do not add less)
Milk powder – 4 tsp
All-purpose flour – 4 tsp
Condensed milk – 4 tbsp
Cardamom powder – 1/4 tsp
Optional: sugar – 5 tbsp (you can add less to make it less sweet)
Ghee – 1 tsp
Nuts and raisins for garnishing
